2 Simple Favorites

I love cookies, the chunkier the better. I think that is a subconcious rebellion regarding making cookies with my mom. ;) She would make us half the sugar and chocolate chips in the recipe or only put one smartie on the cookie. So now I may overdo the add ins a little...... Although watching my waistline is proving that my mom might have been on to something.
Chunky Chocolate Chip Cookies
1 cup butter
3/4 cup brown sugar
1/4 cup white sugar
1 tsp vanilla
1 1/2 cups flour
1/2 tsp salt
1 tsp baking soda
1/3 cup boiling water
2 cups rolled oats
1/2 cup sunflower seeds
1/2 cup pumpkin seeds
3/4 cup chocolate chips
 Beat butter until soft. Add sugars and beat until fluffy. Add vanilla. Add flour and salt and mix well. Dissolve baking soda in boiling water and blend into mixture. Stir in the rolled oats, seeds and chocolate chips. Shape into balls (I'm a cookie scoop gal) and Bake at 350 for 10-12 minutes.

This is the best cookie dough to eat raw, no eggs in it! I have a thing against eating cookie dough with eggs in it, just can't do it.
I just noticed that both of these recipes are from my mother-in-law.

 Short Bread
1/2 cup corn starch
1/2 cup berry sugar
1 cup flour
3/4 cup butter (softened)
Beat butter until soft. Sift corn starch, sugar and flour together. Blend into butter until and soft smooth dough forms. Shape dough into balls and place 1 inch apart on partchment lined cookie sheet. Flatten lightly with floured fork. Bake at 300 for 20-25 minutes or until edges are lightly browned.
